MENU 1: Europa Loire Valley
French Onion Soup – caramelized onions, garlic, thyme, white wine chicken & beef broth, topped with cheesy bread crust (Paired with Riesling)
Steak Tartare – diced beef, dijon mustard, cognac, garlic, red onion, capers, salt, pepper (Paired with Rayson Rosé)
Chicken Herb Potato Garlic Confit – chicken quarter, confit of garlic, herbs, potatoes, duck fat, served with sautéed spinach and lemon thyme butter sauce (Paired with Cabernet Franc)
MENU 2: Europa Burgundy
Ratatouille – roasted zucchini, egg-lace, onions, tomatoes, peppers, herbs, EVOO topped with parmesan & gruyere cheese (Paired with Pearl D’Blanc)
Salmon Cassoulet – slow braised vegetables, white beans, in a white wine tomato sauce topped with seared salmon and pan jus (Paired with Rayson Rosé)
Chicken Cordon Bleu – chicken breast wrapped in prosciutto, topped with gruyere cheese served with a white wine beurre blanc sauce, mashed potatoes, and sautéed spinach (Paired with Cabernet Franc)
